This recipe comes from Grillgirl.com, and is your basic chicken wing that is stellar!  I typically make these for every annual Super Bowl and when presented to company are devoured quickly.

I love that they are grilled, which adds lots of flavor, but it doesn’t sit there dripping in it’s fat frying either in a deep fryer or in on an oven sheet.

The marinade is simple, be sure to let them soak at least 24 hours so that they can absorb some of the heat.

I estimate about 3 wings per person

MARINADE
1 tsp olive oil
3 cloves chopped
½ cup of mild hot sauce
1/8 cup of Sriracha sauce
2 chopped chipotle and adobe sauce
½ teaspoon of ground sea salt
1 teaspoon of ground pepper

Place on a grill that is running at around 250 and monitor until they reach 160 degrees.  Remember there is more fat in wings, so monitor that they don’t have flare ups.

For a dipping sauce I recommend a blue cheese dressing.  You obviously have a choice, you can either be lazy and purchase some or make your own.  I love the freshness and pungency of the homemade recipe, and being able to use robust ingredients turn it up a notch.

BLUE CHEESE DIPPING SAUCE
2 cloves of chopped garlic
1 cup of low fat sour cream
1 cup of blue cheese
1 teaspoon of olive oil
1 teaspoon of salt and 1 of pepper

For a bit of coolness, you can either use the classic celery, but I actually love the core heart of romaine lettuce leaves.  No need to waste the rest of the romaine leafs, once you trim off each side use those in a salad).
